Bold and Red



Inspiration comes from so many different places. Recently I took part in a bridal expo and wanted to come up with unique out of the box cake designs.

I came across a kitchen backsplash in a magazine that was grey with red polka dots on it and immediately felt like I needed to interpret it into cake.

I made a grey background with red circles and added a whimsical red flower to add more dimension.

Trifle!



What do you do with left over almond cake? You make a delicious almond cake trifle of course! With fresh made from scratch mixed berry compote, heavenly whipped cream and not to mention dousing the whole thing in sweet almond syrup.
It doesn't feel like spring here yet, but this sure will make you feel well more summery I think!!

Back again!


Didn't even realize that it's been so long since I last posted on my blog. In my absence though I noticed some of the pictures have disappeared. Will have to figure that out, in the meantime, here are some pictures of a cake I made for a couple celebrating their 25th wedding anniversary.



When a customer is not 100% sure how they want to design their cake its a good thing and a bad thing.. good because it gives me free reign but bad because I'm never sure until they see it if they'll love it!

Ruffles are all the rage right now, so I decided to give it a shot. Suffice to say the couple loved it! I was so glad I was able to make this cake for such an amazing milestone!

How to make Gum paste.




Welcome to my first official recipe ever!


I'm going to be talking about Tylose powder today! Most of you may already know what it is. It's basically a non toxic chemical - carboxymethycellulose or CMC for short that when added to fondant or marzipan helps to get firmer. It is also commonly used to make gum paste which has a harder consistency when dry making it perfect to make those beautiful gum paste flowers.

A little bit of Tylose mixed in water also makes edible glue, which helps in making your sculptures and flowers stick together better and have a more firmer structure.

So here's what you need to make a batch of gum paste:
4 egg whites
2 lbs powdered sugar
4 tbsp Tylose powder


METHOD:

Beat the egg whites until foamy. Then gradually add the sugar and turn the mixer on medium for 2-3 minutes until soft peaks form.
While the mixer is running, add the Tylose powder. You will see the mixture getting thick.
Scrape out the mixture and knead. You know you've done enough kneading when the dough is not sticky to touch anymore.


Once the gum paste is ready, wrap it up in seran wrap and put it in a ziplock bag. You can also make smaller portions and stick it in the freezer, just make sure to bring it to room temp before you start using it.

There are many other ways of making gum paste and you should definitely use the one you are comfortable with. I like this because the color of the paste is nice and white and its easy to work with; and if you lose the recipe you can always find it at the back of the Tylose container!
